Tuesdays with Dorie: Caramel Crunch Bars

I’m back at it, after missing two weeks in a row, I managed to bake my Tuesdays with Dorie recipe this week! Woo hoo! Thanks to Whitney of What’s Left on the Table? for choosing this week’s recipe – Caramel Crunch Bars.

First, I blended the sugars and butter and put the dry ingredients in a separate bowl to add in just a few minutes.

Meanwhile, Mike got busy chopping the 9 oz. of bittersweet chocolate required for this recipe. That’s a lot of chocolate!

I added the dry ingredients and the chocolate and ended up with this beautiful shortbread dough.

I spread the dough in the pan and patted it down with my fingers.

After the shortbread was baked, I added the chocolate on top, stuck it back in the oven to melt and spread it across the top of the bars. We could not find toffee bits so we crunched up Heath toffee bars and I sprinkled those on top.

The resulting bars were very rich and chocolaty but won a thumbs up from around the table here at Chez Sticky Feet.

  1. Lovely! Mine were a bit too crisp, I may have overbaked them even though I followed the instructions.

  2. Glad you are back to baking with us…I was afraid you’d skipped out! (Bake now while you can – I have a feeling twins and Bo won’t allow much time for it in the future.)
    Also – been thinking about the 2 car seat/hold Bo’s hand dilemma…I’ll let you know if I think of a solution. That’s a toughie…but there MUST be an answer! Could you not just put them in that double stroller deal and then get Bo out of the car and hold his hand? Is that too simple?

    How do you feel the content/tone of your posts have changed since your blogging went totally public (I used to read you at Part I)? (Maybe public is the wrong word, but I think you know what I mean.)

    What is your feeding philosophy with Bo? You seem to ahev such a good balance I’d love to hear about this!

  5. I’ve never been able to find toffee bits, so I have also used Heath bars. Once I made a cake that was entirely covered in toffee bits, so I scraped the chocolate off and then chopped up 12 entire Heath bars.

    Heath does apparently make toffee bits, but I’ve never seen them in stores — and I rarely plan ahead enough to order ingredients like that online.
